Cheddar? Monterey Jack? Mozzarella? Does the pressure of having to choose just one cheese for your grilled cheese sandwich make you feel like you’re trying to choose your favorite child? Worry no more – it’s National Grilled Cheese Month, and the Non-GMO Project is excited to share several amazing grilled cheese recipes that incorporate many of our favorite non-GMO cheeses!

Did you know that the majority of GMO acres in the U.S., corn, and soy, are in production for livestock feed? Livestock products have a disproportionate impact on GMO acreage because of the large volume of feed they consume; dairy cows eat over 100 pounds of feed a day. More than 80% of GMOs grown worldwide, including most of those feed acres, are engineered for herbicide tolerance. As a result, since GMOs were introduced, there has been a fifteen-fold increase in the usage of glyphosate (the active ingredient in Roundup). In 2015, the World Health Organization classified glyphosate as a probable carcinogen. Recently, California followed suit.

Don’t let this news turn your stomach for too long; lucky for us, the Non-GMO Project has verified hundreds of dairy products from cows consuming non-GMO feed, as well as a host of alternative dairy products. People are demanding dairy products from cows fed a non-GMO diet for a number of reasons, ranging from concerns about health, the environment, animal welfare, food security, and more.

The Non-GMO Project Standard also does not allow the use of recombinant bovine hormone (rBGH) or recombinant bovine somatropin (rBST) (phew!). Purchasing organic and Non-GMO Project Verified Products is a surefire way to keep chemicals and GMOs out of your cheesy snacks.

We’ve come a long way from the simple recipe of bread, cheese, and butter. Which one of these tasty recipes will be your new family favorite?

The Classic

Place 2 slices of cheddar or Monterey Jack cheese between 2 slices Farmhouse White Bread.

Heat 1 tablespoon of unsalted butter or coconut oil in a cast-iron skillet over medium heat. Cook until golden on the bottom, 4 to 5 minutes. Flip and cook until the other side is golden and the cheese melts, 4 to 5 more minutes.

Enjoy alongside a bowl of tomato soup.

The SoCal Beach Bum

Toss 1/2 sliced avocado with lime juice. Sandwich 2 slices of Saa-Wheat! Organic Bread with 2 slices of pepper jack cheese, the avocado, salt and lemon pepper. Cook using the instructions above, chow down while checking the surf report.

The Emerald City

Spread pesto on 2 slices of Organic Classic White Bread. Sandwich 1 slice each of provolone and mozzarella. Cook using the instructions above, pair with a leafy green salad.

The Vegan Delight

Arrange 2 slices of Vegan Gourmet Mozzarella Cheese Alternative, mushrooms, and spinach between your favorite honey-free bread. Cook using the coconut oil instructions above, share a small bite with your favorite furry friend.

Remember – the ultimate grilled cheese chef only flips their sando once. And, if you’re anything like me, you like to dip your grilled cheese sandwiches in ketchup (trust me, just try it). Grab a bottle of your favorite Sir Kensington’s ketchup and submerge that sandwich!
