Creamy Carrot with a Kick Soup

  • 3 cups shredded carrots
  • ½ cup tomato
  • ¼ cup onion
  • ½ cup red bell pepper
  • 1½ cups water or coconut water
  • ¼ cup macadamia nuts (or substitute cashews or almonds)
  • ¼ cup coconut meat (fresh or dried unsweetened)
  • 4 teaspoons date paste (or 2 Medjool dates, pitted)
  • 2 teaspoons mustard
  • 1 teaspoon smoked paprika
  • 1 teaspoon fresh dill
  • 1 teaspoon fresh parsley
  • ½ teaspoon garlic powder
  • ¼ teaspoon chipotle powder (or to taste)


Shred the carrots, chop the tomato, and dice the onion and red bell pepper. Add all the ingredients to a blender. Blend until smooth and warm, about 2 minutes.
