Ingredients
- 3 cups shredded carrots
- ½ cup tomato
- ¼ cup onion
- ½ cup red bell pepper
- 1½ cups water or coconut water
- ¼ cup macadamia nuts (or substitute cashews or almonds)
- ¼ cup coconut meat (fresh or dried unsweetened)
- 4 teaspoons date paste (or 2 Medjool dates, pitted)
- 2 teaspoons mustard
- 1 teaspoon smoked paprika
- 1 teaspoon fresh dill
- 1 teaspoon fresh parsley
- ½ teaspoon garlic powder
- ¼ teaspoon chipotle powder (or to taste)
Instructions
Shred the carrots, chop the tomato, and dice the onion and red bell pepper. Add all the ingredients to a blender. Blend until smooth and warm, about 2 minutes.
