Fast and Easy Blueberry Scones

  • 2 cups spelt flour
  • ½ cup coconut sugar
  • 1½ teaspoons baking powder
  • 1 tablespoon cinnamon
  • 1 cup frozen blueberries
  • ¼ cup sunflower oil
  • ½ cup almond milk (or coconut or soy)


Preheat oven to 425 degrees.

In a large bowl, stir together flour, sugar, baking powder and cinnamon. Stir in blueberries. Add oil and milk and combine with your hands to form a loose dough. Form into a ball while still in the bowl. Pat down to approximately 1 inch thickness and cut into six pieces. Bake on a cookie sheet for 12-15 minutes, until bottoms begin to turn golden brown. Let cool a bit before removing.
