Serves: 2

Total Time: 30 minutes

  • ¼ cup butter
  • 1 cup heavy cream
  • ½ cup white wine
  • 3 cloves garlic, crushed
  • 1 ½ cups freshly grated Parmesan or Gruyere cheese
  • ¼ cup parsley
  • 1 teaspoon basil
  • 3 ½ oz. shiitake mushrooms, sauteed
  • 1 tablespoon extra virgin olive oil

To sautée the shiitake mushrooms, heat 1 tablespoon of extra virgin olive oil in a medium sauté pan and add washed, sliced mushrooms. Add 1 clove of crushed garlic. Sautée on low to medium heat for 5 to 10 minutes or until the mushrooms are soft. Set aside in a glass bowl.

Melt the butter in the sauté pan over medium-low heat. Add cream and white wine and let it simmer for 5 minutes. Then, add the remaining crushed garlic, parsley, and basil. Add the cheese and whisk until melted. Stir in the mushrooms.

Serve over a bed of pasta with a glass of white wine or sparkling white grape juice.
