- 1 bottle Annie’s Organic Buttermilk Dressing
- 2 boneless, skinless organic chicken breasts, split in half (about 1 pound)
- 1 1/2 cups organic cornflake crumbs, seasoned with salt and pepper
- Organic vegetable oil for greasing the pan
In a shallow non-reactive pan, combine the dressing and the chicken, turning to coat well. Cover and refrigerate for at least 1 hour. Preheat oven to 400 degrees. Grease a baking sheet pan. Shake off excess dressing and then dredge both sides of each chicken breast half in seasoned cornflakes. Add coated chicken to baking pan, evenly spaced apart. Bake 25 to 35 minutes, until outside is golden and internal temperature is 165 degrees (°F) as measured with a food thermometer.
