Isabel's Spinach Puffs Side

  • 20 ounces fresh spinach (or 2 packages frozen chopped spinach)
  • 2 cloves fresh minced garlic (or 1 teaspoon garlic powder)
  • 2 cups herb stuffing mix (or bread crumbs and savory herbs)
  • 1 large onion, finely chopped
  • ½ cup Parmesan cheese
  • ⅓ cup butter
  • 4 eggs, well beaten
  • 1 teaspoon pepper
  • ½ teaspoon thyme
  • ½ teaspoon basil


Preheat oven to 350 degrees.

If using frozen spinach, thaw and drain well by squeezing out as much water as possible. For fresh spinach, slice finely and steam. Add remaining ingredients and stir. The mixture should be lumpy and begin to stick together. Shape into small balls about 1½ inches in diameter (it may take a good squeeze) and place on a baking sheet. Not much space is needed between them, as they will not expand.

Bake for 20 minutes or until golden on top and hot all the way through. Serve hot or freeze and reheat for later use. Enjoy!
